Top Three Simple Chicken Recipes for Your Family.

Stay at home parents always have something going. Your day is filled with to-do lists and other tasks that pop up that need to be accomplished. The last thing that we all need is to take up a large portion of our day making dinner. Here are the two simple recipes that will feed your family.

I make these recipes very often around the house. My family loves all of them and that is why we make them. I like these because the timing of them can be changed. If you have more time in your day then you can take more time to make them. If you need to quickly make dinner then these are great for that too.

BBQ Chicken.

Items needed:

  • Chicken Breasts
  • Garlic powder
  • Onion powder
  • Seasoned salt
  • BBQ Seasoning. I pick this up from nearly any big-box grocery store. It is not the best option to use. I use it because it does not take a lot of my time. I am not using 20 different seasonings, it only takes this one. You can choose to use it or not. It all depends on what your family likes to eat.  
  • Black Pepper
  • BBQ sauce for your choice.

I start with boneless skinless chicken breasts. I choose these because everyone in my family likes them. You could easily choose whatever type of chicken that your family likes to eat. I then go to the dry seasonings. I liberally coat both sides with the dry seasonings. Once all the breasts are coated I cover them in a baking dish and put them in the oven. I aim to cook this dish for 4-6 hours. I add butter to the pan and cover them in foil. I check on them from time to time but have also left them for hours on their own and they do just fine. The trick is to keep the temperature low on your oven and to make sure they don’t dry out. This run in the oven will be at 250 degrees for about four hours.

If you want to shortcut this step then you can add the dry rub along with the BBQ sauce. If you choose to shortcut the recipe up the temperature on your oven and lower the cooking time. 

When the chicken is done it is time to add the BBQ sauce. I coat the chicken in BBQ sauce and place it back in the oven uncovered and I raise the temperature to 350 degrees. It usually only takes around 30 minutes in the end and the BBQ sauce becomes sticky and blends well with the dry rub you put on it first.

 After the second run in the oven, your chicken is done. You can choose to add whatever side dishes your family likes. I like this recipe because it is versatile and can be adapted.

Chicken Tenders

  • Boneless Skinless chicken tenders.
  • Eggs
  • Milk
  • Italian Bread crumbs
  • Salt and pepper to taste.
  • Flour

This recipe is very simple and can be adapted to your family’s tastes. Combine the eggs and milk into one bowl and set aside. Now you combine the bread crumbs, salt, and pepper into another.

Simply dunk the tenders into the egg mixture and then the bread crumbs. At this point you are ready to cook them but, if you have time you can take it a step further. You can coat the tenders once in the egg mixture, secondly in flour, and then back in the egg mixture. Then lastly in the bread crumbs.

Cooking is up to you. They hold up well if they are fried or baked. My family likes them either way. I like making these to cook in the oven. I can go off for a few minutes while they are cooking.

Chicken Parmesan. 

  • Boneless Skinless Chicken Breast
  • Pasta sauce of choice
  • Italian seasoning
  • Salt and Pepper to taste
  • Garlic powder
  • Onion Powder
  • Shredded Mozzarella cheese
  • Sliced Provolone cheese

This is another easy meal that my family likes. I like this one because I can cook it at a lower temperature for a longer time or I can cook it lower and slower depending on how much time I have. 

I start by coating the chicken breast on both sides with dry ingredients. At this point, they go into the oven to begin cooking. I usually cook them around 300 degrees for nearly four hours. If I need them to cook faster I cook them at 350 for around an hour. 

During this final thirty minutes of cooking is when the pasta sauce and cheese are added to the chicken. Place one slice of provolone cheese on each chicken breast and top with the shredded mozzarella cheese once everything is melted it is ready to serve. This meal is great with angel hair pasta or you can eat it alone.
